One of my favorite things to make for lunch or dinner on the weekends is grilled cheese and soup! And while I’ve made some pretty fabulous keto soups, they just didn’t seem the same without a grilled cheese sandwich…so I figured I needed to come up with a Keto Grilled Cheese recipe!

This Keto Grilled Cheese sandwich doesn’t disappoint. It’s perfect by itself or with a bowl of soup!
Keto Bread Ingredients:

- 2 Tablespoons Almond Flour
- 2 Tablespoons Coconut Flour
- 2 Eggs
- 1 teaspoon Baking Powder
- 2 Tablespoons Butter
- 2 Tablespoons Almond Milk
- Pinch of salt
- 1 teaspoon Italian Seasoning
You’ll also want your favorite cheese. I prefer this with either Colby Jack or Land O Lakes White American.
How To Make Keto Sandwich Bread
To make keto sandwich bread, find a small rectangle dish. I had a rectangular plastic dish that I used but I prefer using a glass dish. {When you have lots of kids, you sometimes find the dish you planned on using is either dirty or missing}. You can also use square ramekins, but you’ll want to divide it up into 2 square ramekins because cutting it in half is challenging. I’ve even used round ramekins in a pinch, but you end up with a round sandwich which seems weird to me. It still tastes delicious…it just looks weird!
Spray your dish with oil or butter to keep the bread from sticking.
Add all ingredients (except cheese) to the bowl and whisk together.

Add the batter to your dish.

Microwave for 2 minutes. Your bread slices are now ready for you to make grilled cheese. It’s super easy!

To make the grilled cheese, cut your rectangular bread in half to form 2 square slices. Then butter each slice of bread.
Using a skillet over medium heat, add one bread slice, butter side down. Add sliced cheese to the middle and top with the remaining bread slice butter side up.

Cook your sandwich over medium heat until cheese has melted, flipping it halfway through. It usually takes about 3 minutes til the bread is golden and the cheese is melted.

Serve it with a bowl of keto soup or eat it by itself! It’s delish!!!
